For Tandoori Aloo
2 cups par-boiled potatoes big cubes
1/2 cup onion cubes
1/2 cup tomato cubes
1/2 cup capsicum cubes
1/4 cup melted butter
1 small charcoal piece
1/2 tsp ghee
For The Marinade
1/2 cup thick curd (dahi)
1 tbsp roasted besan (bengal gram flour)
1 tbsp ginger-garlic (adrak-lehsun) paste
1/2 tsp turmeric powder (haldi)
1 1/2 tbsp red chilli powder
2 tsp lemon juice
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp garam masala
2 tsp chaat masala
salt to taste
1 tbsp dried fenugreek leaves (kasuri methi)
2 tbsp hot mustard (rai / sarson) oil

- To make tandoori aloo, in a deep bowl, add 1/2 cup thickcurd (dahi).
- Add 1 tbsp roasted besan (bengal gram flour).
- Add 1 tbsp ginger-garlic (adrak-lehsun) paste.
- Add 1/2 tsp turmeric powder (haldi).
- Add 1 1/2 tbsp red chilli powder.
- Add 2 tsplemon juice.
- Add 1 tsp coriander-cumin seeds (dhania-jeera) powder.
- Add 1 tsp garam masala.
- Add 2 tspchaat masala.
- Add salt to taste.
- Add 1 tbspdried fenugreek leaves (kasuri methi).
- Add 2 tbsp hot mustard (rai / sarson) oil.
- Mix well.
- Add ½ cup onion cubes.
- Add ½ cup tomato cubes.
- Add ½ cup capsicum cubes.
- Add ½ cup par-boiled potato big cubes.
- Gently mix to coat them well in the marinade.
- Make a space in the center and place a vati.
- Now give smoke of live charcoal.
- Put ghee over it.
- Cover the bowl and keep aside for 2-3 minutes.

- Now arrange the marinated onion cubes, tomato cubes, capsicum cubes and potato cubes on a steel skewer.
- Cook the skewer on an open flame for 3 to 4 minutes.
- Apply melted butter all over the skewer.
- Cook until they get charred evenly.
- Serve tandoori aloo hot with green chutney and pickled onions.

The receipe did not come out well at all. The quantity of oil, water mentioned looks wrong. This should need half the oil and half the water mentioned above
