Instant Pot Chicken Lettuce Wraps Recipe - quick and easy lettuce wraps filled with ground chicken cooked in Asian sauce. Perfect dinner idea for busy weeknights!
One of our favoritecopycat recipes of restaurant meals are lettuce wraps. They are so easy and so fun to make and eat! You can fill lettuce wraps with so many different fillings. My go-to is ground chicken cooked in hoisin sauce, soy sauce, vinegar, garlic, sweet chili sauce and ginger, whisked together into one flavor-packed mixture. It is flavorful and delicious!
INSTANT POT CHICKEN LETTUCE WRAPS
These Instant Pot Chicken Lettuce Wraps are perfect for a busy weeknight when you want a quick and easy and delicious meal. It's a slightly modified version of my P.F. Chang's Copycat Chicken Lettuce Wraps recipe that I can now make in my pressure cooker.
HOW TO MAKE CHICKEN LETTUCE WRAPS IN THE INSTANT POT?
- Start by gathering ingredients and check if your stainless steel insert is in your Instant Pot. To know why I always mention this step, read my Instant Pot Guide for Beginners.
- Press "saute" setting and wait 1 minute. Add vegetable and sesame oil to insert and let heat up.Press "saute" setting and wait 1 minute. Add vegetable and sesame oil to insert and let heat up.
- Add ¼ cup of chicken broth and deglaze the bottom of the pot.
- In a small mixing bowl or measuring cup, whisk together all of the ingredients for the sauce. Pour mixture over chicken and stir well.
- Close the lid, set valve to sealing position (newer models do it on their own). Make sure the IP is set to cook at HIGH pressure. Press "manual" setting and set timer to 4 minutes.
- When the timer is done, let the pressure release naturally for at least 10 minutes.Carefully open the lid away from your face. Stir chicken.Add chopped water chestnuts to chicken and stir. Adding water chestnuts after cooking chicken, helps them remain the crunchy texture.
- Place up to ¼ cup of mixture onto each lettuce leaf. Pour remaining sauce over chicken filling. Serve immediately.
CAN I USE OTHER MEAT IN THIS RECIPE?
Yes! You can use ground beef, turkey or chicken. They all work great in this recipe! I assume you can even use tofu but I have not tested cooking tofu in the pressure cooker yet.
WHAT TYPE OF LETTUCE CAN I USE FOR LETTUCE WRAPS?
Any kind! Typically, you will seelettuce cups recipes call for butter lettuce. That includes Boston and Bibb lettuce, which are varieties of butterhead lettuce. You can also use Romaine lettuce as the leaves are strong enough to be filled. They look more like boats then cups.

Ingredients
- 1 tablespoon vegetable oil
- 2 teaspoon sesame oil
- 1 lb ground chicken
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 small yellow onion chopped
- 2 cloves garlic minced
- ¼ cup chicken stock
- ¼ cup hoisin sauce
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon apple cider vinegar or rice vinegar
- 1 teaspoon sesame oil
- 2 tablespoons sweet chili sauce
- 1 teaspoon ground ginger
- 8 oz. can water chestnuts drained
- 8 leaves of butter lettuce
Instructions
Make sure the stainless steel insert is in your Instant Pot. Press "saute" setting and wait 1 minute. Add vegetable and sesame oil to insert and let heat up.
Add ground chicken to Instant Pot and cook, breaking down with wooden spoon. Season with salt and pepper. Add onion and garlic. Cook until chicken is no longer pink. Press "cancel/off" button.
Add ¼ cup of chicken broth and deglaze the bottom of the pot.
In a small mixing bowl or measuring cup, whisk together hoisin sauce, soy sauce, sesame oil, vinegar, ginger and sweet chili sauce. Pour mixture over chicken and stir well.

Notes
If you don't have ground chicken on hand, you can slice boneless skinless chicken breast into slices, partially freeze it (20 to 30 minutes in the freezer should do it), then pulse in the food processor until you reach desired texture. If you don't like or have chicken on hand, you can also make this recipe with ground turkey.

Very tasty for a weeknight dinner. I had it with homemade egg fried rice.
Question: my sauce was quite thin when I though it might thicken during cooking? I was wondering if you have any ideas how I can thicken it? I thought I might try adding cornstarch slurry after the pressure cooking part of the recipe? (Or is the sauce supposed to be quite a thin consistency? )
